There's 4 eye styles: beady, big, narrow, and round. All are available on the man Dress-up page.
You can change the color of all but the beady eyes, by finishing the Easter 09 event. (I think you have to finish it, may not though.)

Hm, we don't hear they are "very hard". If you get stuck, read the past comments on the events "starting page".
Others usually post hints there. But if you can't find any hints, you could check the list of those who've finished it and send someone a pm asking politely for hints. (The ones at the bottom where the latest to finish, so it'll be fresher in their mind.) Or ask mods. :D
